Pollyanna Brewing Co. opens Roselare in Roselle

Pollyanna Brewing Co. opened its second suburban location Friday in Roselle.

The new location, called Roselare Brewery & Tap Room, is at 245 E. Main St.

The new establishment includes a brewing area, a 97-seat tap room, a 3,000-square-foot German-style beer garden and a small retail area.

Roselare is a name that, according to founders at Pollyanna, is derived from two inspirational locations; the historic West Flanders city of Roeselare, Belgium and Roselle, Illinois.

Pollyanna Brewing Co. was established in 2014 in Lemont where it also operates a taproom and "fermentarium."

The owners and founders of the brewery are Head Brewer Brian Pawola, President Paul Ciciora, Treasurer Don Ciciora, VP of Operations Ed Malnar and CFO Ryan Weidner.

"Roselare will be a destination business that will bring in patrons from the entire Chicagoland area," said Natalie Engel, Roselle economic development coordinator.

Pollyanna Brewing Company is a craft brewery that specializes in mixed culture fermentations and wood aging experiments, and has imported two new oak foudres for the Roselle location.

The tap room at Roselare will operate on a bring-your-own-food model, including delivery from local restaurants and food trucks.
